Crying Tiger Steak Ingredients Steak+Marinade * 1 ribeye steak * 1 tbsp soy sauce * 1 tbsp oyster sauce * 1 tbsp fish sauce * 1 tbsp sugar * 1 tsp black pepper * 1 tbsp neutral oil Sauce(Nam Jim Jeow) * 1 tbsp glutinous rice * 1.5 tbsp palm sugar * 3 tbsp fish sauce * 2 tbsp tamarind paste * 3 tbsp lime juice * 1 tbsp Thai chili flakes(to taste) * 1 small shallot(sliced) * 1/4 cup cilantro(chopped) Instructions 1. Marinate steak with ingredients for 15 minutes. 2. While that’s marinating make the sauce by toasting rice in a dry pan on medium heat until golden brown. Use a mortar and pestle to grind it into a fine powder. 3. Pound palm sugar and combine it with the rest of ingredients. 4. Heat a pan with 3 tbsp of oil on medium high heat. Once shimmering, sear the steak for 30 seconds on each side making sure to continuously flip until it forms a nice crust. I used a two inch steak and cooked it for a total of 1.5 min on each side. 5. Let cook in a 200°F oven until it reaches your desired doneness. I cooked mine to 135°F for medium rare. 6.
