Day 12/20 – Vodka Pasta Ingredients: – 250g rigatoni – 2 shallots finely diced – 2 cloves of garlic finely diced – 1 tsp chilli flakes – 1 tsp oregano – 130g tomato paste – 1 shot vodka – 1 cup thickened cream – 1 cup Parmesan cheese – Parsley to garnish 1. Heavily season boiling water with salt and add rigatoni, stirring for 30 seconds to avoid sticking 2. Heat up 1 tbsp olive oil in a frying pan and add shallot and garlic. Sauté for 2 mins or until shallot is translucent. Add chilli flakes, oregano and tomato paste, cooking off the tomato paste for 1-2 mins. 3. Deglaze the pan with a shot of vodka, allowing the alcohol to cook out before adding the cream and mixing to combine 4. Bring to a simmer and cook for 5 mins or until cream thickens further, add Parmesan cheese now 5. Take rigatoni out of water 1 minute before it’s finished cooking, transfer into the cream sauce 6. Allow pasta to finish cooking in the sauce then add cold, cubed butter, stirring vigorously. This thickens the sauce and makes it glossy 7.
