1. Start by preheating your oven to 350°F and lining a baking sheet with parchment paper.
2. In a mixing bowl, combine 1 cup of almond flour, 1/4 cup of cocoa powder, 1/4 cup of granulated sweetener (such as erythritol or stevia), 1/2 tsp of baking powder, and a pinch of salt.
3. Add in 1/4 cup of melted coconut oil and 1 large egg to the dry ingredients and mix until a dough forms.
4. Fold in 1/4 cup of sugar-free chocolate chips or chopped dark chocolate.
5. Using a cookie scoop, scoop dough onto the prepared baking sheet and flatten slightly with your fingers.
6. Bake for 10-12 minutes, or until the edges are set. Allow to cool before enjoying your delicious and decadent low carb chocolate cookies.
